A great Summer meal. Use the freshest ingredients you can. You can play with the amounts to suit your taste.
Pour 1/2 – 3/4 cup good quality Olive Oil into a bowl.
Add 3 or more cloves of finely minced FRESH garlic, some freshly ground pepper and salt.
Gently stir in a generous handful of FRESH basil that has been cut into strips.
Add a generous amount of FRESH tomatoes, diced.
Remove the rind from 1/2 – 1 pound of Brie cheese. Tear into pieces and add to oil mixture.
Let the mixture sit, covered, on counter 2 – 4 hours, stirring occasionally. (Do not refrigerate.)
Boil about a pound of FRESH pasta ( Linguini or Fettuccini ) till el dante.
Drain and add to oil mixture, tossing gently till covered.
Serve immediately with fresh bread.
